Yesterday we had a few guests coming over for some drinks after work. Since T had the day off he wanted us to have a kitchen date where we make food together. The one recipe that T has been wanting to try for some time now is cucumber cups stuffed with a spicy crab mix. The original recipe came from a Pinterest link.

We didn't research the recipe fully before going out for groceries. We ended up with the larger cucumbers, and I recommend sticking with the smaller ones found on the original recipe. The larger cucumber made it awkward to eat.
First step, we mixed up the crab mix to go into the cups.
Next step was prepping the cucumbers.
We weren't a fan of the naked cucumber, it didn't look as "cucumbery" so on the second one we made it a bit fancy and only peeled of strips.
Then we cut the cucumbers and prepped them to have their insides gutted. In the original recipe it calls for a melon baller, but we actually just used a measuring spoon. I believe it was 1/2 teaspoon that T got out to use. It was quite genius.
Once it was scooped out we started to put the filling in to the cups. They looked quite fancy for the company.
We added the paprika on top of the filling.
The last step was to garnish the dish with some green onion, fairly simple.
We were quite excited to see how they tasted and didn't want to wait for the company to arrive, so we ended taking two out of the batch and made our own taste test.
The recipe was straight forward and easy to go through. We thought they tasted okay. We weren't in love. T rated it a 3.5/5. First, we both agreed the smaller cucumber was best and second we felt the filling was a little bland. We have made crab triangles in the past and felt that the filling for the triangles would suit the cucumber cups. We would make it again, but just tweak a few things with the recipe. The cucumber cups only sit well for a couple hours so they aren't good the next day.
